Cá mua về làm , rửa sạch. Cho vào tô rãi lên 1 muỗng canh muối hột và 1 muỗng canh giấm chà sơ sơ cho sạch. Bỏ nước đó đi. Tiếp rửa lại nước lạnh và cho vào tô thêm 1 muỗng cà phê muối và 1 muỗng canh giấm để rửa lại.
Dùng dao bén, bảng dao mỏng để tách lấy thịt cá ra khỏi xương. Lấy bỏ xương nhỏ. Rửa dưới vòi nước nhẹ cho sạch.
Dùng dao tách nhẹ phần da cá mỏng bên ngoài bỏ. Cho ra giấy thấm cho ráo nước.
Hòa tan hỗn hợp : 2 muỗng canh giấm táo, 1 muỗng cà phê đường, 1/2 muỗng cà phê muối cho tan nếm thử xem vừa cứng cứng vị mặn, chua chua là được. Cho 1/2 hỗn hộp dấm vừa hòa tan vào đĩa sâu lòng, cho cá vào.. tiếp theo cho phần dấm còn lại vào đĩa. Tẩm ướp cá cho ướt đều. Lấy nylon đậy lại, cất vào tủ lạnh.
Cá hai mặt chín tái, ở giữa còn sống thịt hồng. Khi ăn cảm giác giòn giòn, không quá chua không mặn vị vừa ăn. Trang trí với củ cải trắng cắt sợi và cá hồi.
