Tôm rửa sạch, bóc vỏ để đuôi. Cho vào nồi luộc chín rồi vớt ra tô nước lạnh. Sau đó vớt ra để ráo nước.
Bỏ phần cứng của măng tây. Cắt măng tây thành các khúc dài khoảng 5 cm. Chần măng tây trong nồi nước đang sôi với ít muối trong khoảng 1 phút thì vớt măng tây và nhúng vào trong nước lạnh rồi để ráo nước.
Vẫn trong nồi nước đang sôi đó, nhúng đầu hành lá xuống trước, giữ như thế khoảng 30 giây rồi cho cảu cọng hành vào, nhúng thêm 20 giây nữa. Cho hành ra xả với nước lạnh rồi thấm khô nước. Dùng các cọng hành lá cuộn tôm với măng lại, cuốn phần trắng của hành trước.
Dùng đũa gài phần cuối của lá hành vào trong cho chặt rồi xếp ra đĩa. Làm tương tự cho đến hết nguyên liệu. Pha 1 muỗng canh giấm với 1/2 muỗng canh đường, 1 muỗng canh tương ớt gochujang và 1/4 muỗng cà phê bột tỏi để làm nước chấm cùng.
